This fattoush is fresh, crunchy, and full of bright flavor from crisp vegetables, toasted pita, and a tangy homemade dressing. It’s the perfect refreshing salad to serve alongside any meal.

- 2 romaine lettuce heads, chopped
- 1 red bell pepper, chopped
- 3 baby cucumbers, chopped
- 1 cup cherry tomatoes, sliced
- 4 green onions, chopped
- mint, to taste
- 1 bunch parsley, chopped
- 1 cup radish, chopped
- 3 pita breads, cut into pieces
- Olive oil, for coating the pita
- Zaatar, for seasoning the pita
Dressing
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 2 tbsp pomegranate molasses
- 4 garlic cloves, minced
- 1 tsp salt
- 1 tsp sumac
Instructions
- Prepare the pita chips
Cut the pita bread into pieces and place them on a baking sheet. Drizzle with olive oil and sprinkle with zaatar. Toss well, then bake until golden and crisp. - Prepare the vegetables
Chop the romaine lettuce, red bell pepper, cucumbers, cherry tomatoes, green onions, mint, and radish. Add everything to a large bowl. - Make the dressing
In a small bowl or jar, whisk together the olive oil, lemon juice, pomegranate molasses, garlic, salt, and sumac until well combined. - Assemble the salad
Pour the dressing over the vegetables and toss well. Add the toasted pita pieces right before serving so they stay crisp.
