- 2 lbs stewing beef
- 1 tbsp onion powder
- 1 tbsp garlic powder
- 1 tbsp salt
- 1 tsp black pepper
Sauce Ingredients
- 1 yellow onion
- 1 cup crushed tomatoes
- 8 garlic cloves
- 2 tbsp cumin
- 1 tbsp salt
- 2 tbsp oregano
- 1 tsp black pepper
- 1 can chipotle peppers
- 2 tbsp white vinegar
- 1/4 cup lime juice
Cooking Ingredients
- 2 cups beef broth
- 2 bay leaves

- Tortillas
- Guacamole
- Pickled Red Onions
Instructions
- Season & Sear the Beef
Pat the beef dry. Season with: onion powder, garlic powder, salt, black pepper. Sear in a hot pan until browned on all sides. Remove and set aside. - Make the Sauce
Add all sauce ingredients to a blender: onion, crushed tomatoes, garlic, cumin, oregano, salt & pepper, chipotle peppers, vinegar, lime juice. Blend until smooth. - Cook the Beef
Return beef to the pot. Pour the blended sauce over it. Add: beef broth, bay leaves. Bring to a boil, then reduce heat to low. Cover and simmer for 4–5 hours until the beef is tender and shreddable. Instant Pot option: Cook on high pressure ~45–60 minutes, then natural release. - Shred the Beef
Remove the beef and shred using two forks. Return it to the sauce and mix well. - Assemble Tacos
Warm tortillas. Add shredded beef. Top with: guacamole, pickled onions, cilantro, squeeze of lime. - Notes / Tips
The longer it simmers, the better the flavor., If the sauce is too thin, let it reduce uncovered for a bit., This also works amazing for burritos or rice bowls..
