Shredded Beef Tacos

  • Beef Ingredients

  • 2 lbs stewing beef
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 1 tbsp salt
  • 1 tsp black pepper
  • Sauce Ingredients

  • 1 yellow onion
  • 1 cup crushed tomatoes
  • 8 garlic cloves
  • 2 tbsp cumin
  • 1 tbsp salt
  • 2 tbsp oregano
  • 1 tsp black pepper
  • 1 can chipotle peppers
  • 2 tbsp white vinegar
  • 1/4 cup lime juice

  • 2 cups beef broth
  • 2 bay leaves
  • Serving Ingredients

  • Tortillas
  • Guacamole
  • Pickled Red Onions

Instructions

  1. Season & Sear the Beef
    Pat the beef dry. Season with: onion powder, garlic powder, salt, black pepper. Sear in a hot pan until browned on all sides. Remove and set aside.
  2. Make the Sauce
    Add all sauce ingredients to a blender: onion, crushed tomatoes, garlic, cumin, oregano, salt & pepper, chipotle peppers, vinegar, lime juice. Blend until smooth.
  3. Cook the Beef
    Return beef to the pot. Pour the blended sauce over it. Add: beef broth, bay leaves. Bring to a boil, then reduce heat to low. Cover and simmer for 4–5 hours until the beef is tender and shreddable. Instant Pot option: Cook on high pressure ~45–60 minutes, then natural release.
  4. Shred the Beef
    Remove the beef and shred using two forks. Return it to the sauce and mix well.
  5. Assemble Tacos
    Warm tortillas. Add shredded beef. Top with: guacamole, pickled onions, cilantro, squeeze of lime.
  6. Notes / Tips
    The longer it simmers, the better the flavor., If the sauce is too thin, let it reduce uncovered for a bit., This also works amazing for burritos or rice bowls..
