This loaded potato taco bowl is the ultimate easy dinner. It’s made with crispy seasoned potatoes, flavourful taco beef, fresh pico de gallo, and all the best toppings for a quick and satisfying meal.

Ingredients
Serves 4For the Potatoes
- 4 to 5 russet potatoes, peeled and diced
- 2 tbsp olive oil
- 1 tbsp onion powder
- 1 tbsp garlic powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tbsp chili powder
- 1 tsp cayenne pepper
- 1 tbsp oregano
For the Taco Beef
- 1.5 lbs ground beef
- 1 onion, chopped
- 1 package taco seasoning
- 1 tbsp oregano
- 1 tbsp tomato paste
Pico de Gallo
- 1/2 white onion, finely chopped
- Juice of 1 lime
- 1 Roma tomato, chopped
- Handful of cilantro, chopped
- Salt, to taste
- Black pepper, to taste
Toppings
- Queso
- Shredded cheese
- Cilantro lime sauce
- Taco Bell sauce
Instructions
- Season the potatoes
In a large bowl, toss the diced potatoes with olive oil, onion powder, garlic powder, salt, black pepper, chili powder, cayenne pepper, and oregano until well coated. - Cook the potatoes
Roast or air fry the potatoes until golden, crispy, and cooked through. - Cook the taco beef
In a pan over medium heat, cook the chopped onion until softened. Add the ground beef and cook until browned, breaking it apart as it cooks. Stir in the taco seasoning and cook until fully combined and flavorful. - Make the pico de gallo
In a bowl, mix together the white onion, lime juice, Roma tomato, cilantro, salt, and black pepper. - Assemble the bowls
Add the crispy potatoes to your bowl, then top with the taco beef. - Add toppings
Finish with pico de gallo, queso, shredded cheese, cilantro lime sauce, and Taco Bell sauce. - Serve
Serve warm and enjoy right away.
