This chicken parm with spicy rigatoni is such a good dinner when you want something extra comforting. The crispy chicken, melted cheese, and creamy spicy pasta are such a good combo.

Ingredients
Serves 4Spicy Rigatoni Pasta
- 1/2 white onion, chopped
- 2 tbsp minced garlic
- 2 tbsp tomato paste
- 2 cups heavy cream
- 2 tbsp red pepper flakes
- 1 tbsp oregano
- 1 tsp salt
- 1/2 tbsp garlic powder
- 1/2 tbsp onion powder
- Rigatoni
- Parmesan
Chicken Parm
- Chicken breast, sliced and beaten
- Eggs
- Flour
- Breadcrumbs
- Mozzarella
- Pasta sauce from above
Instructions
- Prepare the chicken
Slice the chicken breasts and beat them thin. - Season the chicken
Season the chicken however you like before breading. - Set up the breading station
Prepare one bowl with seasoned flour, one bowl with beaten eggs, and one bowl with breadcrumbs. - Boil the pasta
Bring a pot of salted water to a boil and cook the rigatoni until al dente. Reserve a little pasta water, then drain. - Start the pasta sauce
In a pan with olive oil over medium heat, cook the chopped onion and garlic until softened and fragrant. - Build the sauce
Add the tomato paste and cook for a minute, then add the red pepper flakes, oregano, salt, garlic powder, and onion powder. Stir well. - Add the cream and parmesan
Pour in the heavy cream and let it simmer gently. Add Parmesan and stir until the sauce is creamy and smooth. - Fry the chicken
Bread the chicken by dipping it into the flour, then egg, then breadcrumbs. Fry until golden and cooked through. - Make the chicken parm
Spoon some of the sauce over the fried chicken, top with mozzarella and Parmesan, then place under a low broil until the cheese is melted and bubbly. - Finish the pasta
Toss the cooked rigatoni into the spicy sauce and add more Parmesan. - Plate and serve
Serve the spicy rigatoni with the chicken parm on top or on the side.
