Instructions

  1. Marinate the chicken
    In a bowl, combine the cut chicken with cornstarch, chili powder, garlic powder, salt, and lime juice. Mix well and set aside while you prepare the sauce.
  2. Make the peanut sauce
    In a bowl, whisk together the peanut butter, soy sauce, red Thai curry paste, lime juice, and chili flakes if using. Set aside. You can thin it later with the pasta water as needed.
  3. Cook the noodles
